Use of cornstarch in pastillas?
The use of the Cornstarch is to thicken the final product and to make them intact when you are going to mold it to a shape that you wanted. It can also have like powder effect when you bite but not as fine as the cornstarch before you mixed it.
The use of cornstarch is commonly used in making traditional pastillas de leche to make the texture more velvety and gritty. Here's a good pastillas de leche recipe using cornstarch:
- 1 Liter milk
- 3/4 cup sugar
- 1/2 teaspoon cornstarch
Procedures: 1. Mix all the ingredients and cook in a medium heat constantly stirring. 2. Stir the mixture until it thickens then reduce the heat. 3. Continue mixing until it solidifies. 4. Remove from heat then let it cool for fifteen to twenty minutes. 5. Cut them into small shapes and wrap them in a Japanese paper. The above mentioned pastillas recipe is the commonly used recipe in making traditional pastillas de leche using cornstarch.
