On the Samsung Galaxy S2 how do you take off the writing on screen?
The writing you are referring to could be wallpaper. If you want to take it off, you can change it by going to your Home screen > Menu key > Settings > Display >Screen Display > Wallpaper > Gallery > Choose the wallpaper of your choice.
You can also change the Lock screen wallpaper by going to Home screen > Menu key > Settings > Display >Screen Display > Lock Screen Wallpaper > Gallery > Gallery > Select the wallpaper of your choice.

How to delete them from the phone and insert new ones
On your device you will find these icons on the bottom of the screen. In order to remove them, simply press and hold on the icons to move them around your screen and out of your panel.
If you want to add something to the bottom of your screen you will simply need to long press over another icon and move it to the bottom of your screen where the previous icon was located.
These icons can be added from your menu or even your home screen itself, so you can replace whatever icons you want to replace.

You can add home screens on your phone by doing the following.
- Go to your home screen.
- Touch the "Home" key.
- Touch the Menu button.
- Select Edit.
- Press and hold the home screen with a plus sign icon, then drag it to your preferred location.
