Caramel Filled Chocolate Cookies
Ingredients
- 1 cup softened butter
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 3/4 cup unsweetened cocoa powder
- 1 cup chopped walnuts
- 1 tablespoon white sugar
- 48 chocolate covered caramel candies
Instructions
- 1Beat together butter or margarine til creamy.
- 2Gradually add sugars and beat well.
- 3Add eggs and vanilla and beat well again.
- 4Gradually add to the butter mixture, beating well.Combine flour, baking soda and cocoa.
- 5Stir in 1/2 cup nuts
- 6Cover and chill at least 2 hours.
- 7Preheat oven to 375 degrees F
- 8Combine remaining 1/2 cup nuts with the 1 tablespoon sugar
- 9Work with one part at a time leaving the rest in the refrigerator. Divide each part into 12 pieces.Divide the dough into 4 parts.
- 10Dip one side into sugar.Quickly press each piece of dough around a chocolate covered caramel and roll into ball.
- 11Place sugar side up 2 inches apart on baking sheets.
- 12Let cool one minute. Remove to wire rack and cool completely.Bake for 8 minutes.
Apple Butter Filled Cookies
Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 2 teaspoons cream
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- Apple butter
Instructions
- 1Mix shortening, sugar and eggs then stir in cream and vanilla.
- 2Stir flour, soda and salt together until well blended.
- 3Chill for at least 1 hour.Stir into egg mixture.
- 4Roll dough about 1/8 inch thick on lightly floured cloth covered board.
- 5Cut into round shapes of about 2 1/2 inches.
- 6Place half the rounds on lightly greased cookie sheet; top each with a rounded teaspoon of apple butter.
- 7Place them over the filled ones and close the edges together.Make slits in leftover rounds.
- 8Bake 8 to 10 minutes in a 400 degrees oven.
Chocolate Nut Filled Cookies
Ingredients
- 2/3 cup shortening
- 2/3 cup sugar
- 2 eggs
- 2 cups all purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Chocolate Nut Filling
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/2 cup chocolate syrup
- 1/4 cup pecans; chopped
Instructions
- 1Combine the sugar, cornstarch, chocolate syrup, and pecans and cook over low heat until thick and smooth. Cool.Make the Chocolate Nut Filling first so that it can cool.
Raisin Filled Cookies
Ingredients
- 1 cup sugar
- 1/2 cup butter
- 1 egg
- 4 tablespoons milk
- 1 teaspoon vanilla
- 2 cups flour
- 3/4 teaspoon soda
- 1 1/2 teaspoons cream of tartar
Raisin Filling:
- 1 cup chopped raisins
- 1/2 cup sugar
- 1 cup boiling water
- Lemon juice to taste
Instructions
- 1Blend the sugar and butter together then stir in the unbeaten egg, milk and vanilla.
- 2In another bowl, sift together flour, soda and cream of tartar.
- 3Add enough flour to roll very thin then cut.Sift into creamed mixture.
- 4Place on baking sheet and add filling then place a second cookie on top, pressing edges tight.
- 5Bake in a 375 degrees oven until done.Cut a small hole in top.
- 6Mix raisins, sugar, and boiling water and leave on low heat until thickened. Add lemon juice and allow it to cool.For Raisin Filling:
Filled Peanut Butter Cookies
Ingredients
- 1 package (12 ounce) peanut butter morsels
- 2 cup unbleached all purpose flour
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup butter or margarine (softened)
- 3/4 cup firmly packed brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Peanut Butter Filling:
- 1/2 cup finely chopped peanuts
- 3 teaspoon honey
- 2 teaspoon Milk
- 1/4 teaspoon ground cinnamon
- 2/3 cup non melted peanut butter morsels
Instructions
- 1Preheat the oven to 400 Degrees F.
- 2In a saucepan, melt the peanut butter morsels and set aside.
- 3In a medium bowl, combine the flour, salt and baking soda and set aside.
- 4In a large mixing bowl, combine the butter, sugars, egg and vanilla.
- 5Beat on medium speed, of an electric mixer, until creamy.
- 6Blend in the melted peanut butter morsels then gradually add the flour mixture.
- 7Shape into 1 inch balls and place 2 inches apart on non-greased cookie sheets.
- 8Press in the center of the cookies, with your thumb, and fill the center with 1/4 teaspoon of the peanut butter filling mixture.
- 9Bake for 7 to 10 minutes.
- 10Thoroughly mix the peanuts, honey, milk, and cinnamon in a bowl. Add the peanut butter morsels; stir well.For Peanut Butter Filling:
Filled Molasses Cookies
Ingredients
- 3/4 cup brown sugar
- 3/4 cup shortening
- 1/2 cup molasses
- 2 teaspoons vanilla
- 1/3 cup hot water
- 2 teaspoon baking soda
- 1 teaspoon salt
- 4 cups pastry flour
For Filling: (directions below)
- 1/2 cup water
- 1 cup sugar
- 1 package dates
- 1 teaspoon lemon extract
Instructions
- 1Cream the sugar and shortening together then add molasses and vanilla.
- 2Dissolve the soda in hot water and add alternately with flour and salt.
- 3Roll thin.
- 4Take one cookie and spread filling over the top. Lay another cookie over the first and press the edges together.Cut with cookie cutter.
- 5Bake in a moderate oven (350 to 375) till cookies look golden brown.
- 6Mix the water, sugar, Dates, and Lemon Extract. Cook over low heat until it thickens. Cool.Filling:
