One of the easiest types of cookies that you will ever make are known as drop cookies. When you make drop cookies you eliminate the need for the rolling and the cookie cutters but you still get a delicious quality cookie that is made from ingredients that you know to be fresh and wholesome.

There are a wide range of drop cookies and among them are some which don't even require baking. No bake drop cookies are quite popular and require very little effort, yet serve up a helping of dark chocolate in most cases which has antioxidants as well as oatmeal which is well known for helping to lower your overall cholesterol. Not quite what you'd expect from a cookie, is it?

NO BAKE DROP COOKIES

Ingredients

  • 3 cups oatmeal
  • 3 tablespoons cocoa
  • 2 cups sugar
  • 1 teaspoon margarine
  • 1/2 cup coconut
  • 1/2 cup walnuts, chopped
  • 1/2 cup milk
  • 1/2 cup peanut butter

    Add sugar, cocoa, margarine and milk in a saucepan.

    Bring to a rapid boil, then cook 1 1/2 minutes

    Remove from heat and add peanut butter, stir until dissolved, then add the coconut and oatmeal and nuts.

BUTTERSCOTCH DROP COOKIES

Ingredients

  • 2 cups firmly packed dark brown sugar
  • 2/3 cup soft butter or margarine
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup buttermilk
  • 1 cup chopped nuts, optional
  • 3 cups sifted flour
  • 1 teaspoon double-acting baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon

    Cream together sugar and butter.

OATMEAL DROP COOKIES

Ingredients

  • 1/2 cup shortening
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 cup molasses
  • 1 3/4 cups flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups oats
  • 1/2 cup nuts
  • 1 cup raisins

    Ingredients

    • 1 cup shortening
    • 1 cup brown sugar
    • 1 cup white sugar
    • 2 eggs
    • 2 cups chopped gum drops, spiced
    • 2 teaspoons vanilla
    • 1/2 cup milk
    • 3 cups flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 2 teaspoon cinnamon
    • 1/4 teaspoon ginger
    • 1/4 teaspoon cloves

    SUGAR DROP COOKIES

    Ingredients

    • 2 1/2 cups flour
    • 1/2 teaspoon soda
    • 1/4 teaspoon salt
    • 1 egg
    • 1/2 cup butter
    • 1/2 cup shortening
    • 1 cup sugar
    • 1 teaspoon vanilla

    BASIC DROP COOKIES

    Ingredients

    • 1/2 cup margarine
    • 1/2 cup brown sugar
    • 1/2 cup white sugar
    • 1 slightly beaten egg
    • 1 cup + 2 tablespoons flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/4 teaspoon hot water

    PEANUT DROP COOKIES

    Ingredients

    • 1 cup sugar
    • 1 cup white syrup
    • 2 cups peanut butter
    • 4 cups Rice Krispies

      In a medium sized saucepan combine sugar and syrup and boil exactly 1 minute.

    Ingredients

    • 1/2 cup shortening
    • 1 3/4 cup flour
    • 1 cup sugar
    • 1/2 teaspoon baking soda
    • 1 egg
    • 1/2 teaspoon salt
    • 3/4 cup buttermilk
    • 1/2 cup unsweetened cocoa powder
    • 2 teaspoons vanilla
    • 1 cup chopped walnuts or pecans

      Pre-heat oven to 300 degrees.
