My phone keeps telling me that touchwhiz has ceased working and whether I wish to stop it. it subsequently locks up and I have to manually restart it. What could be causing it?

You can try and use this freeware called One Click Root.
Download it here (this one is specific for S2): http://www.oneclickroot.com/phone/samsung-galaxy-s2/
All you need to do is the following:
- download the program installer
- connect your S2 to the computer via USB
- make sure you enable USB debugging on your phone
- once installed (the software), open it and click Root Now
As for the custom ROM:
Go here:

Follow the steps provided within the link.
