Salty and/or Black Cumin Stick Fingers

Are you tired of serving your family,especially your kids,store bought snacks? Are you doing the same cookies over and over again? If so, maybe it's time for a new idea.

Stick fingers are similar to what we call bread sticks. Some people serve this as an appetizer,particularly in restaurants.

In this recipe, if you choose not to implement the salt and black cumin flavor, the bread sticks may be infused with other tastes. It could be done with cheese, herbs, cinnamon-sugar mixture or simply a dust of icing sugar.

    4 glasses of plain Flour.

    1½ glass of Warm Water.

    1 tablespoon Yeast.

    ½ glass Semolina.

Preparing Dough Method

    Add the 1 glass of Warm Water, the Sugar, and the Yeast in saucepan and stir well

    In another bowl, add 1/2 glass of Warm Water, the Olive Oil, and 2 teaspoons Salt, and mix them well

    Add plain Flour to the Yeast mixture and mix and stir until well combined for 10 min, shiny Dough will develop

    Grease a 35 cm round oven shallow tray with Olive Oil

    Sprinkle half the quantity of Semolina over the Oil to cover the whole tray, then sprinkle the ½ teaspoon of Salt over the Semolina

    Lay down half of the Dough in the above tray, press it by hand till it stretches over the whole tray then grease the face of the Dough with Olive Oil by hand

    Sprinkle the remaining Semolina over it.

    Cover the tray with tin paper

    Let it rest for an hour in room temperature.

    Slice it with a cutter in about 1.5cm width

    Arrange it in an oven tray

    You can shape it in round or longitude bars.

    Bake in a preheated oven with 180 °C for 15 minutes or until top is golden

    Use the second half of the Dough and replace the Semolina with Black Cumin, follow the same above steps.

  • Cook and allow to cool down, can be served with a Dipping Sauce.

  • Mix the all ingredients together and serve it alongside with the Salty and Cumin Fingers.

Notes

  • If you don't have semolina, you can substitute it with rice flour or all purpose flour.
  • Semolina usually is added to this recipe to create a tasty crust. So if in case you will use other substitute for semolina, it won't be as taste as it should be.
  • Sumac has a fruity-tart flavor, other notes that it is better to use this spice to replace lemon, because it does not over power the other tastes in a recipe.
  • If in case sumac is not available, then you can just substitute it with lemon juice.
