Caramel Filled Chocolate Cookies

Ingredients

  • 1 cup softened butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup unsweetened cocoa powder
  • 1 cup chopped walnuts
  • 1 tablespoon white sugar
  • 48 chocolate covered caramel candies

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons cream
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • Apple butter

Ingredients

  • 2/3 cup shortening

Chocolate Nut Filling

  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup chocolate syrup
  • 1/4 cup pecans; chopped

Instructions

    Make the Chocolate Nut Filling first so that it can cool.
    Combine the sugar, cornstarch, chocolate syrup, and pecans and cook over low heat until thick and smooth. Cool.
