    When it comes to chickens we prefer free-range chickens.
    They need to be living a stress-free life. If they are tucked up in a cage somewhere, they are obviously not in a good state of health and they are quite stressed-out. They need to be eating their natural diet. Most places feed them corn, soy, and all these genetically-modified ingredients that can actually make them sick. A good free-range chicken is one of the best things and it's what we are after.

    What we want to do is actually buy the whole chicken, cook it up, and eat it.
    One chicken can obviously serve a whole family. What we want to do is pull it apart and use it as leftovers for another meal or snacks throughout the week.

    The next thing we need to talk about is the water that we are going to use in our broth.
    We do not want to use a tap water. Usually, when we drink we don't use the tap water either because it's full of fluoride, chlorine, and a whole lot of chemicals that can actually clog up our body. Either buy a purified water or get a filter. Go to my website and visit my shop. You will see some awesome filters there.

    What we are going to do is put the water in a big pot.

    The water should sit roughly an inch above the chicken bones.

    Now that we got the chicken bones in our purified water, we need to add half a cup of wine.
    Obviously, organic wine is the best way to go. We do cook the alcohol out of it so don't worry.

    The reason why we use the alcohol is because it draws all the calcium and goodness out of the bones.
    You can also use apple cider vinegar if you like - that's a bit of a personal preference. Some find that apple cider vinegar can make it taste a bit funny. This wine does not do too bad of a job.

    It is very important not to boil your broth.
    It makes it go sour and it almost ruins your broth. What we are going to do is to bring the water up to a point where it's simmering and let it sit for 2.5 to 3 hours. The good thing about chicken stock is that it's a bit shorter in length in terms of the cooking time.

    About an hour into cooking, we can see a bit of scum forming on the outer side.

    Two and a half hour is roughly going by now.
    Chicken stock is looking pretty good. Remember, you can go longer if you want to but two and a half hour is enough.

    What we want to do is get rid of the carcass.
    We will just scoop the main part - this goes out first. We know if we've done it right because the chicken just falls apart in our hands.

    Get a bag and throw the carcass into it.
    Get rid of the main bits. We know that we did it right when the bones almost completely disintegrate as well - they fall apart.

    We've used some celery, carrot, fennel, onion, and a couple little things in here such as garlic and ginger.
    They all work with me and my metabolic type - I'm a parasympathetic dominant. If you don't know what metabolic typing is, go to my website and check the videos in there - one of the best things I highly recommend you guys do.

    Many cultures around the world use this as a staple diet especially those cultures who do not have access to dairy. They needed the calcium and all of the other bacteria and trace elements that they cannot get.

    Basically, bone broth provides us with easily absorbable trace minerals which is one of the most important things that we need.
    All those broken down bones that we have after a long time of simmering - the bones, tendons, and the cartilage provide us with glucosamine (which is good for our joints), calcium, potassium, and even magnesium as well as many other trace minerals which are very good for us.

    Some of you may have heard of this before but gelatin is really good for all of that connective tissues in the body. Gelatin is good for our skin and for those people who worry about cellulite. Gelatin is also good for the digestive tract, muscles, heart muscles, and our bones.

    Most people these days do have problems with their tummy. Bone broth, when used on a daily basis, can actually aid with the repair of that intestinal infection and damage which is really good for us.

    There are so many reasons why we want to have bone broth.
    Of course, everybody is different. What you put into your bone broth is going to be different as well. Just try a couple of different things and see what works best for you. As I say, a cup of bone broth a day will keep the doctor away. Enjoy!

    It's been roughly forty minutes since we've taken the bones out and put the vegetables in.
    We are just going to throw the rest of the herbs in. We've got some garlic, ginger, and some pepper which are all going in with bay leaves.

    Unfortunately, we don't have a fresh turmeric so we are going to use this one for now - nothing beats the fresh stuff.

    Don't forget some natural sea salt, too.
    This adds to the taste. As we go along and once we pour this into a jar, we can taste this. We can actually add more salt if we want to. Natural sea salt is very good for us - not table salt. It is very important that we understand that.
