How to turn off iCloud on iPhone 6 plus in order to back up the phone?

My phone has not been back up for 34 weeks due to I forgot my password.. . Although I click "forgot my password", then apple will sent a message saying to my old email address that is not existing. Now I cannot do any updates nor sign up for any new app!
