When you say turn your phone off then remove SD card. It says remove SD but I think you always have to unmount an SD card before removing it or it can get damaged or I will lose stuff on it

No, when you turn off your mobile, it auto unmounts the SD card. The only case you need to unmount, is if you want to remove the SD while the mobile is still ON.
